I basically want to start my own commercial real estate company. I already work in this field. I want to start a corporation so I can build credit, but I’m not ready to even buy any property yet. Is there any way to incorporate a start up company with no assets, and no intention on doing business for another 1-2 years?

Yes, but you will pay the licensing fees for as long as you hold the license.

Yes, file your articles of incorporation with the Secretary of state, hold your board of directors meetings and shareholders meetings, start a corporate bank account. Take out a secured line of credit on the money in the bank account.
